Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 4 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped mushrooms and sauté for about 5 minutes until they are soft and any moisture has evaporated.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed mushrooms, mozzarella cheese, Italian seasoning, salt, and pepper. Mix well to combine.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the mushroom and cheese mixture, securing the opening with toothpicks if necessary.
- In an oven-safe skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven, let rest for 5 minutes, and garnish with fresh parsley before serving.
Notes
- For added flavor, consider mixing in some cooked spinach or sun-dried tomatoes with the mushroom filling.
- If you prefer a crispy topping, sprinkle some breadcrumbs mixed with Parmesan cheese on top of the stuffed chicken before baking.
