A delicious and easy recipe for Cheesy Garlic Butter Mushroom Stuffed Chicken, perfect for a hearty meal.
Ingredients
- 2 large chicken breasts
- 1 cup mushrooms, finely chopped
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 375°F.
- In a skillet over medium heat, melt the butter. Add the chopped mushrooms and sauté for about 5 minutes until they are soft.
- Stir in the minced garlic, thyme, and parsley, cooking for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed mushroom mixture, mozzarella cheese, and cream cheese. Season with salt and pepper to taste.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through. Stuff each pocket generously with the mushroom and cheese mixture.
- Rub the outside of the chicken breasts with olive oil and sprinkle with paprika, salt, and pepper.
- Place the stuffed chicken breasts in a greased baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Let the chicken rest for 5 minutes before slicing. Serve warm.

- For a lighter version, use skinless chicken breasts and reduce the amount of cheese.
