Ingredients

  • 2 large chicken breasts
  • 1 cup mushrooms, finely chopped
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet over medium heat, melt the butter. Add the chopped mushrooms and sauté for about 5 minutes until they are soft.
  3. Stir in the minced garlic, thyme, and parsley, cooking for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed mushroom mixture, mozzarella cheese, and cream cheese. Season with salt and pepper to taste.
  5. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through. Stuff each pocket generously with the mushroom and cheese mixture.
  6. Rub the outside of the chicken breasts with olive oil and sprinkle with paprika, salt, and pepper.
  7. Place the stuffed chicken breasts in a greased baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Let the chicken rest for 5 minutes before slicing. Serve warm.
