Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchinis, olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss until the zucchinis are well coated.
  3. Spread the zucchini mixture evenly on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 15 minutes.
  5. Remove the baking sheet from the oven and sprinkle the mozzarella and Parmesan cheeses evenly over the zucchinis.
