Ingredients
- 2 large zucchini, sliced into 1-inch thick rounds
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and Italian seasoning.
- Add the zucchini rounds to the bowl and toss until they are evenly coated with the garlic oil mixture.
- Arrange the zucchini rounds in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15 minutes.
- Remove the zucchini from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the tops.
- Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.
