Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups frozen hash browns (thawed)
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup milk
  • 1/2 cup breadcrumbs (optional)
  • 2 tablespoons olive oil (for greasing)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked beef mixture, thawed hash browns, cream of mushroom soup, sour cream, 1/2 cup of the cheddar cheese, salt, pepper, and paprika. Stir until well combined.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. In a small bowl, mix the milk with the remaining cheddar cheese and pour it over the casserole.
  6. If using, sprinkle breadcrumbs on top for added crunch.
  7. Bake in the preheated oven for 45-50 minutes or until the casserole is bubbly and golden brown on top.
  8. Let it cool for 5-10 minutes before serving.
