Ingredients
- 3 large boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 ounces cream cheese, softened
- ½ cup sharp cheddar cheese, shredded
- ½ cup Monterey jack cheese, shredded
- 2 fresh jalapeños (diced for filling, sliced for garnish)
- 1 cup frozen corn
- ¼ cup heavy whipping cream
- ¼ cup whole milk
- ½ small onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon red pepper flakes
- 1 tablespoon all-purpose flour
- ¼ cup Parmesan cheese, grated
Instructions
- Prepare the Chicken – Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Season both sides with garlic powder, paprika, salt, and black pepper.
- Make the Filling – In a bowl, mix cream cheese, cheddar cheese, Monterey jack cheese, and diced jalapeños until well combined.
- Stuff the Chicken – Divide the cheese mixture evenly among the chicken breasts and fold them closed.
- Sear the Chicken – Heat olive oil and butter in a skillet over medium heat. Sear the stuffed chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- Make the Creamed Corn – In the same skillet, sauté onions, garlic, and red pepper flakes for 2 minutes. Add corn and cook for another 3 minutes.
- Thicken the Sauce – Sprinkle in flour and stir to coat. Pour in heavy cream and milk, stirring until thickened. Mix in Parmesan cheese.
- Bake & Finish – Nestle the seared chicken into the creamed corn, top with extra cheese and sliced jalapeños, and broil for 3-5 minutes until bubbly and golden brown.
