Ingredients

  • 2 pounds baby potatoes, halved
  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved baby potatoes and sliced smoked sausage. Drizzle with olive oil and sprinkle the ranch seasoning mix over the top. Toss until everything is evenly coated.
  3. Spread the potato and sausage mixture in a single layer on a large baking sheet. Season with salt and pepper to taste.
  4. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through for even cooking.
  5. Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
