Ingredients

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large saucepan over medium heat, melt the butter. Add the sliced onions and sauté until they are soft and translucent, about 5 minutes.
  3. Stir in the flour, garlic powder, salt, black pepper, and paprika. Cook for 1-2 minutes until the mixture is bubbly.
  4. Gradually whisk in the heavy cream and milk, bringing the mixture to a simmer. Cook until it thickens slightly, about 3-5 minutes. Remove from heat.
  5. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cream mixture over the potatoes, then sprinkle with half of the shredded cheese.
  6. Repeat the layers with the remaining potatoes, cream mixture, and cheese.
  7. Cover the baking dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly. Let it cool for 10 minutes before serving.
  9. Garnish with chopped parsley before serving.
