Description

Cheesy Spinach & Feta Quesadillas are a quick and delicious meal option, perfect for any time of the day.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 large flour tortillas
  • Salt and pepper to taste
  • Sour cream or salsa for serving (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until wilted.
  2. In a mixing bowl, combine the sautéed spinach, feta cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Heat a separate skillet over medium heat. Place one tortilla in the skillet and spoon about 1/4 of the cheese and spinach mixture onto one half of the tortilla.
  4. Fold the tortilla in half to cover the filling and cook for 2-3 minutes until the bottom is golden brown.
  5. Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and the cheese is melted.
  6. Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat with the remaining tortillas and filling.
  7. Serve warm with sour cream or salsa if desired.

Notes

  • For a spicier kick, add diced jalapeños to the cheese mixture.
  • For a healthier option, use whole wheat tortillas and add additional vegetables like bell peppers or mushrooms.
