Description
A delicious and easy-to-make cheesy spinach puff pastry that is perfect for appetizers or snacks.
Ingredients
- 2 sheets of frozen puff pastry, thawed
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 egg (for egg wash)
- Sesame seeds (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, one egg, garlic powder, salt, and black pepper. Mix until well combined.
- Roll out each sheet of puff pastry on a lightly floured surface to smooth out any creases. Cut each sheet into 4 squares.
- Place a generous spoonful of the cheese and spinach mixture in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a pocket and pinch the edges to seal. You can use a fork to crimp the edges for a decorative touch.
- Place the stuffed pastries on the prepared baking sheet. In a small bowl, beat the remaining egg and brush it over the tops of the pastries. Sprinkle with sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed up.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For added flavor, mix in some chopped sun-dried tomatoes or cooked bacon into the cheese mixture.
- Substitute the spinach with other greens like kale or Swiss chard for a different taste.
