Description

A healthy and delicious lasagna made with layers of zucchini, spinach, and cheese, perfect for a nutritious meal.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
  3. In a 9×13 inch baking dish, spread a thin layer of marinara sauce on the bottom.
  4. Layer half of the zucchini slices over the sauce, followed by half of the ricotta mixture, half of the chopped spinach, and half of the mozzarella cheese.
  5. Repeat the layering process with the remaining zucchini, ricotta mixture, spinach, and marinara sauce. Top with the remaining mozzarella and sprinkle with Parmesan cheese.
  6. Drizzle a little olive oil over the top.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  9. Let the lasagna cool for 10 minutes before slicing and serving.

  • For a heartier dish, add cooked ground turkey or beef between the layers.
