A healthy and delicious lasagna made with layers of zucchini, spinach, and cheese, perfect for a nutritious meal.
Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
- In a 9×13 inch baking dish, spread a thin layer of marinara sauce on the bottom.
- Layer half of the zucchini slices over the sauce, followed by half of the ricotta mixture, half of the chopped spinach, and half of the mozzarella cheese.
- Repeat the layering process with the remaining zucchini, ricotta mixture, spinach, and marinara sauce. Top with the remaining mozzarella and sprinkle with Parmesan cheese.
- Drizzle a little olive oil over the top.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For a heartier dish, add cooked ground turkey or beef between the layers.
- For a gluten-free option, ensure the marinara sauce is free from added sugars or gluten-containing ingredients.
