Description
Cheesy Zucchini Breadsticks are a delicious and easy-to-make snack or appetizer that combines the goodness of zucchini with cheesy flavors.
Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon red pepper flakes (optional)
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
- In a separate bowl, mix together the mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, black pepper, flour, baking powder, and red pepper flakes (if using).
- Add the squeezed zucchini to the cheese mixture and stir until well combined.
- Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the top is set.
- Remove from the oven and let it cool for a few minutes before slicing into sticks. Serve warm with marinara sauce for dipping.

- For added flavor, mix in chopped fresh herbs like basil or parsley.
- Substitute half of the all-purpose flour with almond flour for a gluten-free option.
