A delightful twist on veggies, this Cheesy Zucchini Casserole combines zucchini, cheese, and breadcrumbs for a delicious and satisfying dish.
Ingredients
- 2 medium zucchinis, sliced
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- ¼ cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the sliced zucchini to the skillet and cook for another 5-7 minutes until the zucchini is tender. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the sautéed zucchini and onion mixture with the cheddar cheese, mozzarella cheese, breadcrumbs, eggs, garlic powder, salt, and black pepper. Mix until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is set.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
- For added flavor, mix in some cooked ground turkey or sausage to the zucchini mixture before baking.
- Substitute the breadcrumbs with crushed cornflakes or gluten-free breadcrumbs for a different texture.
