A delightful twist on veggies, this Cheesy Zucchini Casserole combines zucchini, cheese, and breadcrumbs for a delicious and satisfying dish.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the sliced zucchini to the skillet and cook for another 5-7 minutes until the zucchini is tender. Remove from heat and let cool slightly.
  4. In a large mixing bowl, combine the sautéed zucchini and onion mixture with the cheddar cheese, mozzarella cheese, breadcrumbs, eggs, garlic powder, salt, and black pepper. Mix until well combined.
  5. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the grated Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is set.
  7. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
