A delicious and easy recipe for Cheesy Zucchini Rolls filled with a creamy cheese mixture and topped with marinara sauce.
Ingredients
- 2 medium zucchinis, thinly sliced lengthwise
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- 1 tablespoon olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ricotta cheese, 1/2 cup of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- Lay the zucchini slices on a clean kitchen towel and sprinkle with a little salt. Let them sit for about 10 minutes to draw out moisture, then pat dry with another towel.
- Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
- Take a zucchini slice and place about 1 tablespoon of the cheese mixture at one end. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining zucchini slices and cheese mixture.
- Once all the rolls are in the dish, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella cheese. Drizzle with olive oil.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
Notes
- For a spicier kick, add crushed red pepper flakes to the cheese mixture.
- Substitute the ricotta cheese with cottage cheese for a lighter option or use a dairy-free cheese alternative for a vegan version.
