Description
A delicious and cheesy zucchini sandwich that combines fresh vegetables with melted cheese, perfect for a quick meal.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 4 slices of whole grain bread
- 1 medium tomato, sliced
- Fresh basil leaves (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the zucchini slices with salt, black pepper, and olive oil until evenly coated. Arrange the zucchini in a single layer on the prepared baking sheet.
- Bake the zucchini in the preheated oven for 15-20 minutes, or until they are tender and slightly golden. Remove from the oven and let cool slightly.
- In a small bowl, mix together the mayonnaise, garlic powder, and dried oregano.
- Toast the slices of whole grain bread until golden brown.
- Spread the garlic mayo mixture evenly on one side of each slice of toasted bread.
- Layer the baked zucchini slices on two of the bread slices, followed by the sliced tomato and a generous sprinkle of mozzarella and Parmesan cheese.
- Top with the remaining slices of bread, mayo side down, to form sandwiches.
- Place the sandwiches on the baking sheet and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a minute, and garnish with fresh basil leaves if desired. Cut in half and serve warm.
Notes
- For added flavor, try using different types of cheese such as cheddar or pepper jack.
- You can also add cooked bacon or turkey slices for extra protein and flavor.
