Description

A delicious and cheesy zucchini sandwich that combines fresh vegetables with melted cheese, perfect for a quick meal.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 4 slices of whole grain bread
  • 1 medium tomato, sliced
  • Fresh basil leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the zucchini slices with salt, black pepper, and olive oil until evenly coated. Arrange the zucchini in a single layer on the prepared baking sheet.
  3. Bake the zucchini in the preheated oven for 15-20 minutes, or until they are tender and slightly golden. Remove from the oven and let cool slightly.
  4. In a small bowl, mix together the mayonnaise, garlic powder, and dried oregano.
  5. Toast the slices of whole grain bread until golden brown.
  6. Spread the garlic mayo mixture evenly on one side of each slice of toasted bread.
  7. Layer the baked zucchini slices on two of the bread slices, followed by the sliced tomato and a generous sprinkle of mozzarella and Parmesan cheese.
  8. Top with the remaining slices of bread, mayo side down, to form sandwiches.
  9. Place the sandwiches on the baking sheet and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, let cool for a minute, and garnish with fresh basil leaves if desired. Cut in half and serve warm.

  • For added flavor, try using different types of cheese such as cheddar or pepper jack.
