Cheesy Zucchini Stacks are a simple and delicious treat made with layers of zucchini, marinara sauce, and melted cheese.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the zucchini slices on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, garlic powder, and Italian seasoning. Toss to coat evenly.
- Roast the zucchini in the preheated oven for about 15 minutes, until slightly tender.
- Remove the zucchini from the oven and layer the marinara sauce on top of each slice.
- Sprinkle shredded mozzarella cheese over the marinara, followed by a sprinkle of grated Parmesan cheese.
- Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired before serving.

- For a spicy kick, add crushed red pepper flakes to the marinara sauce.
