Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the zucchini slices on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, garlic powder, and Italian seasoning. Toss to coat evenly.
  3. Roast the zucchini in the preheated oven for about 15 minutes, until slightly tender.
  4. Remove the zucchini from the oven and layer the marinara sauce on top of each slice.
  5. Sprinkle shredded mozzarella cheese over the marinara, followed by a sprinkle of grated Parmesan cheese.
