Description

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup cornstarch
  • 1 teaspoon almond extract
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or a round baking pan.
  2. In a medium bowl, combine the cherries, 1/4 cup of granulated sugar, lemon juice, and vanilla extract. Toss to coat the cherries evenly and set aside to marinate for about 10 minutes.
  3. In a separate large bowl, whisk together the flour, baking powder, salt, and remaining 3/4 cup of granulated sugar.
  4. In another bowl, mix the melted butter, eggs, and milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour half of the batter into the prepared pie dish. Spread the marinated cherries evenly over the batter, then pour the remaining batter on top.
  6. In a small bowl, whisk together the cornstarch and almond extract. Drizzle this mixture over the top of the pie.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the pie to cool for at least 15 minutes before slicing. Dust with powdered sugar if desired.
