Description
A delicious Cherry Custard Pie made with fresh or frozen cherries, perfect for dessert lovers.
Ingredients
- 2 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1/4 cup cornstarch
- 1 teaspoon almond extract
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or a round baking pan.
- In a medium bowl, combine the cherries, 1/4 cup of granulated sugar, lemon juice, and vanilla extract. Toss to coat the cherries evenly and set aside to marinate for about 10 minutes.
- In a separate large bowl, whisk together the flour, baking powder, salt, and remaining 3/4 cup of granulated sugar.
- In another bowl, mix the melted butter, eggs, and milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Pour half of the batter into the prepared pie dish. Spread the marinated cherries evenly over the batter, then pour the remaining batter on top.
- In a small bowl, whisk together the cornstarch and almond extract. Drizzle this mixture over the top of the pie.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the pie to cool for at least 15 minutes before slicing. Dust with powdered sugar if desired.
Notes
- For a richer flavor, consider adding a tablespoon of cocoa powder to the batter for a chocolate twist.
- Swap out cherries for blueberries or peaches for a different fruit pie experience.
