A delicious dessert featuring a crispy egg roll wrapper filled with sweet cherry filling, perfect for any occasion.
Ingredients
- 1 cup fresh or frozen cherries, pitted and halved
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 10 egg roll wrappers
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a medium saucepan over medium heat, combine the cherries, granulated sugar, cornstarch, vanilla extract, and almond extract. Stir until the mixture begins to bubble and thicken, about 5-7 minutes. Remove from heat and let cool for about 10 minutes.
- Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the cherry filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a little water on your fingers to moisten the edges if needed. Repeat with remaining wrappers and filling.
- In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F. Carefully add a few egg rolls at a time, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- Dust with powdered sugar before serving. Enjoy warm!
