Ingredients
- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 4 large flour tortillas
- 1 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, mashed avocado, ranch dressing, cheddar cheese, black beans, corn, diced tomatoes, and cilantro. Mix well until all ingredients are evenly coated. Season with salt and pepper to taste.
- Lay a flour tortilla flat on a clean surface. Spoon about 1/4 of the chicken mixture onto the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top, ensuring the filling is secure inside. Repeat with the remaining tortillas and filling.
- If desired, heat a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
