A delicious and hearty dish featuring spaghetti squash, chicken, bacon, and ranch dressing, perfect for a comforting meal.
Ingredients
- 2 medium spaghetti squashes
- 1 pound boneless, skinless chicken breasts
- 6 slices bacon
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Place them cut side down on a baking sheet and roast for 30-40 minutes, or until the flesh is tender and can be easily shredded with a fork.
- While the squash is roasting, cook the bacon in a skillet over medium heat until crispy. Remove the bacon and let it drain on paper towels. Reserve 2 tablespoons of the bacon grease in the skillet.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper. In the same skillet with the reserved bacon grease, cook the chicken over medium heat for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing.
- Once the spaghetti squash is done, use a fork to scrape the flesh into strands. In a large bowl, combine the spaghetti squash strands, sliced chicken, crumbled bacon, ranch dressing, and half of the cheddar cheese. Mix well until everything is evenly coated.
- Transfer the mixture back into the squash halves and top with the remaining cheddar cheese. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and garnish with chopped parsley if desired. Serve warm.
Notes
- For a spicy kick, add diced jalapeños or a dash of hot sauce to the mixture before baking.
- Substitute the ranch dressing with blue cheese dressing for a different flavor profile.
