Description

A delicious and hearty dish featuring spaghetti squash, chicken, bacon, and ranch dressing, perfect for a comforting meal.


Ingredients

  • 2 medium spaghetti squashes
  • 1 pound boneless, skinless chicken breasts
  • 6 slices bacon
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Place them cut side down on a baking sheet and roast for 30-40 minutes, or until the flesh is tender and can be easily shredded with a fork.
  2. While the squash is roasting, cook the bacon in a skillet over medium heat until crispy. Remove the bacon and let it drain on paper towels. Reserve 2 tablespoons of the bacon grease in the skillet.
  3. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. In the same skillet with the reserved bacon grease, cook the chicken over medium heat for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing.
  4. Once the spaghetti squash is done, use a fork to scrape the flesh into strands. In a large bowl, combine the spaghetti squash strands, sliced chicken, crumbled bacon, ranch dressing, and half of the cheddar cheese. Mix well until everything is evenly coated.
  5. Transfer the mixture back into the squash halves and top with the remaining cheddar cheese. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven, let cool slightly, and garnish with chopped parsley if desired. Serve warm.

  • For a spicy kick, add diced jalapeños or a dash of hot sauce to the mixture before baking.
  • Substitute the ranch dressing with blue cheese dressing for a different flavor profile.
