Ingredients

  • 2 pounds boneless, skinless chicken thighs

  • 3 cloves garlic, minced

  • ¾ cup dry red wine (or substitute chicken broth)

  • 1 (28-ounce) can crushed tomatoes (no added sugar)

  • 8 ounces baby bella mushrooms, sliced

  • 2 teaspoons Italian seasoning

  • ¼ cup black olives or green olives (optional)


Instructions

  1. Sear the Chicken
    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Season chicken thighs with salt and pepper. Add them to the skillet and sear both sides until golden brown. Remove chicken and set aside.

  2. Cook the Vegetables
    In the same pan, add chopped onion and sliced bell pepper. Sauté until soft and aromatic, about 4–5 minutes. Add garlic and cook for 1 minute more.

    Return the seared chicken to the skillet, nestling it into the sauce. Reduce heat and simmer for about 10 minutes, or until the chicken is fully cooked and tender.
