Chicken, Cheese, and Zucchini Muffins are a savory delight, perfect for a snack or light meal.
Ingredients
- 2 cups shredded zucchini (about 2 medium zucchinis)
- 1 cup cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 large eggs
- 1/4 cup milk
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, combine the shredded zucchini, cooked chicken, and shredded cheddar cheese. Mix well to combine.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.
- In a separate bowl, beat the eggs, then add the milk and olive oil, mixing until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the zucchini, chicken, and cheese mixture until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, try mixing in different cheeses such as mozzarella or feta.
- Substitute the chicken with cooked turkey or even cooked sausage for a different twist.
