Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 2 cups fresh green beans, trimmed and cut into 2-inch pieces
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breast to the skillet and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the green beans and red bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. Add the minced garlic and ginger to the skillet and stir-fry for an additional 1 minute until fragrant.
  5. In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, and chicken broth. Pour this sauce over the vegetables in the skillet.
  6. Return the cooked chicken to the skillet and stir to combine everything. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
  7. Serve the stir fry over cooked rice or noodles.

Notes

  • For added flavor, marinate the chicken in soy sauce and ginger for 30 minutes before cooking.
  • Feel free to substitute the green beans with broccoli, snap peas, or bell peppers for a different vegetable mix.
