Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orange juice (freshly squeezed if possible)
  • 1 tablespoon orange zest
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/4 teaspoon red pepper flakes (optional)
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the orange juice, orange zest, soy sauce, honey, minced garlic, and red pepper flakes (if using). Stir to combine and bring to a simmer.
  5. In a small bowl, mix the cornstarch and water until smooth. Gradually add this mixture to the sauce, stirring constantly until the sauce thickens (about 2-3 minutes).
  6. Return the chicken to the skillet, spoon the sauce over the top, and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Remove from the oven and let the chicken rest for a few minutes. Garnish with chopped green onions before serving.

Notes

  • For a thicker sauce, increase the cornstarch to 1.5 tablespoons.
  • Serve over steamed rice or quinoa to soak up the delicious sauce.
  • You can also add vegetables like bell peppers or broccoli to the skillet for a complete meal.
