Description
A delicious and easy-to-make Chicken Mei Fun recipe featuring tender chicken and colorful vegetables stir-fried with rice noodles.
Ingredients
- 2 cups dry mei fun rice noodles
- 1 pound boneless, skinless chicken thighs, sliced thin
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup bean sprouts
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- Soak the mei fun noodles in warm water for about 30 minutes or until softened. Drain and set aside.
- In a bowl, combine the sliced chicken, soy sauce, oyster sauce, and sesame oil. Marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the bell peppers and carrots to the skillet, stir-frying for about 3-4 minutes until slightly tender.
- Add the softened mei fun noodles, cooked chicken, and bean sprouts to the skillet. Toss everything together and stir-fry for another 2-3 minutes until heated through. Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions and sesame seeds if using. Serve hot.
Notes
- For a vegetarian option, substitute the chicken with tofu and use vegetable broth instead of oyster sauce.
- Add your favorite vegetables such as snap peas or broccoli for extra nutrition and flavor.
