Description

A delicious and easy-to-make Chicken Mei Fun recipe featuring tender chicken and colorful vegetables stir-fried with rice noodles.


Ingredients

  • 2 cups dry mei fun rice noodles
  • 1 pound boneless, skinless chicken thighs, sliced thin
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. Soak the mei fun noodles in warm water for about 30 minutes or until softened. Drain and set aside.
  2. In a bowl, combine the sliced chicken, soy sauce, oyster sauce, and sesame oil. Marinate for 15 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
  5. Add the bell peppers and carrots to the skillet, stir-frying for about 3-4 minutes until slightly tender.
  6. Add the softened mei fun noodles, cooked chicken, and bean sprouts to the skillet. Toss everything together and stir-fry for another 2-3 minutes until heated through. Season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped green onions and sesame seeds if using. Serve hot.

Notes

  • For a vegetarian option, substitute the chicken with tofu and use vegetable broth instead of oyster sauce.
