Description

A delicious and hearty dish featuring chicken sausages, zucchini, tomatoes, and pasta, perfect for a family meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken sausages, sliced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 8 ounces pasta (penne or rotini)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes.
  3. Add the sliced zucchini and cook for another 3-4 minutes until they begin to soften.
  4. Stir in the cherry tomatoes, minced garlic, Italian seasoning, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes are softened.
  5. Add the cooked pasta to the skillet and toss everything together until well combined.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Toss again to mix.
  7. Serve warm, garnished with fresh basil leaves if desired.

  • For a lighter version, use turkey or veggie sausages.
  • Add a splash of lemon juice before serving for a fresh flavor boost.
