A delicious and hearty dish featuring chicken sausages, zucchini, tomatoes, and pasta, perfect for a family meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound chicken sausages, sliced
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 8 ounces pasta (penne or rotini)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes.
- Add the sliced zucchini and cook for another 3-4 minutes until they begin to soften.
- Stir in the cherry tomatoes, minced garlic, Italian seasoning, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes are softened.
- Add the cooked pasta to the skillet and toss everything together until well combined.
- Remove from heat and sprinkle with grated Parmesan cheese. Toss again to mix.
- Serve warm, garnished with fresh basil leaves if desired.
Notes
- For a lighter version, use turkey or veggie sausages.
- Add a splash of lemon juice before serving for a fresh flavor boost.
