Description

A quick and tasty recipe for Chicken Stir-Fry Noodles, perfect for a weeknight dinner.


Ingredients

  • 2 cups cooked egg noodles
  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  3. Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. Return the cooked chicken to the skillet. Add the cooked egg noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined and heated through.
  5. Stir in the cornstarch mixture and cook for an additional minute until the sauce thickens slightly.
  6. Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve immediately.

Notes

  • For a spicier version, add red pepper flakes or sriracha to taste.
  • You can also substitute the chicken with tofu or shrimp for a different protein option.
