Instructions

  • Prepare and Season the Chicken:

  • Cook the Bacon:

    • Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  • Sauté Mushrooms and Onions:
    • Add sliced mushrooms and chopped onions to the skillet with the bacon fat.
    • Cook for 5–6 minutes, stirring occasionally, until mushrooms are softened and onions are translucent.
    • Add minced garlic and cook for another 1 minute. Remove mixture and set aside with the bacon.
  • Cook the Chicken:
    • Heat olive oil or butter in the same skillet.
    • Add seasoned chicken strips and cook for 4–5 minutes per side until golden brown and cooked through.
    • Remove chicken and set aside.
  • Make the Creamy Mustard Sauce:
    • Deglaze the skillet with chicken broth, scraping up any browned bits for extra flavor.
    • Stir in heavy cream, Dijon mustard, and whole-grain mustard.
    • Let the sauce simmer for 2–3 minutes until slightly thickened.
  • Combine and Simmer:
    • Return the cooked chicken, bacon, and mushroom mixture to the skillet.
    • Stir to coat everything in the creamy mustard sauce.
    • Simmer for 2–3 minutes to meld the flavors.
  • Serve and Garnish:
    • Spoon the chicken and sauce over pasta, rice, or another side of your choice.
    • Garnish with freshly chopped parsley for added flavor and color.
    • Serve warm and enjoy!
