Ingredients
- 2 cups cooked, shredded chicken
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked chicken, sliced zucchinis, cherry tomatoes, mozzarella cheese, and Parmesan cheese.
- In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Pour this mixture over the chicken and vegetable mixture, stirring until everything is well coated.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
