- 4 cups beef broth
- 28 oz. crushed tomatoes
- 10 oz. diced tomatoes with green chilies (undrained)
- 2 bay leaves
- 16 oz. kidney beans, drained
Instructions
- Prepare the Seasonings
- Mix chili powder, cumin, oregano, smoked paprika, cayenne pepper, and red pepper flakes in a bowl. Set aside.
- Season and Sear the Beef
- Pat beef chunks dry. Season with salt, pepper, and 2 teaspoons of the seasoning mix. Toss with flour.
- Heat olive oil in a Dutch oven. Sear beef in batches for 1–1.5 minutes per side until browned. Remove and set aside.
- Deglaze the Pot
- Pour beer into the pot and scrape up browned bits. Reduce by half, about 7–8 minutes.
- Sauté Vegetables
- Add butter, onions, jalapenos, and bell peppers. Cook for 5 minutes until softened.
- Build the Base
- Stir in remaining seasoning mix, garlic, brown sugar, tomato paste, and masa harina (if using).
- Add Worcestershire and hot sauce. Cook for 1–2 minutes until fragrant.
- Combine Ingredients
- Add crushed tomatoes, diced tomatoes with chilies, and beef broth. Stir in bay leaves.
- Return beef to the pot with its juices.
- Simmer
- Bring to a boil, then reduce to low heat. Simmer uncovered for 3–3.5 hours, stirring occasionally.
- Add Beans
- Stir in kidney beans 15 minutes before serving. Heat through and adjust seasonings as needed.
