    • 2 tablespoons light brown sugar
    • 3 tablespoons tomato paste
    • 2 tablespoons masa harina (optional)
    • 2 teaspoons Worcestershire sauce
    • 2 teaspoons hot sauce
    • 4 cups beef broth
    • 28 oz. crushed tomatoes
    • 10 oz. diced tomatoes with green chilies (undrained)
    • 2 bay leaves
    • 16 oz. kidney beans, drained

Instructions

  1. Prepare the Seasonings
    • Mix chili powder, cumin, oregano, smoked paprika, cayenne pepper, and red pepper flakes in a bowl. Set aside.
  2. Season and Sear the Beef
    • Pat beef chunks dry. Season with salt, pepper, and 2 teaspoons of the seasoning mix. Toss with flour.
    • Heat olive oil in a Dutch oven. Sear beef in batches for 1–1.5 minutes per side until browned. Remove and set aside.
  3. Deglaze the Pot
    • Pour beer into the pot and scrape up browned bits. Reduce by half, about 7–8 minutes.
  4. Sauté Vegetables
    • Add butter, onions, jalapenos, and bell peppers. Cook for 5 minutes until softened.
  5. Build the Base
    • Stir in remaining seasoning mix, garlic, brown sugar, tomato paste, and masa harina (if using).
    • Add Worcestershire and hot sauce. Cook for 1–2 minutes until fragrant.
  6. Combine Ingredients
    • Add crushed tomatoes, diced tomatoes with chilies, and beef broth. Stir in bay leaves.
    • Return beef to the pot with its juices.
  7. Simmer
    • Bring to a boil, then reduce to low heat. Simmer uncovered for 3–3.5 hours, stirring occasionally.
  8. Add Beans
    • Stir in kidney beans 15 minutes before serving. Heat through and adjust seasonings as needed.
