Description

A rich and creamy chocolate cherry cheesecake that combines the flavors of chocolate and cherries for a decadent dessert.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • ¼ cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine chocolate cookie crumbs and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
  5. Gradually add the granulated sugar and continue to beat until well combined.
  6. Add the vanilla extract and mix in the eggs one at a time, beating well after each addition.
  7. Finally, mix in the sour cream until smooth.
  8. Pour half of the cheesecake batter over the cooled crust.
  9. Spoon half of the cherry pie filling over the batter, then pour the remaining cheesecake batter on top.
  10. Finish by adding the remaining cherry pie filling and sprinkle the chocolate chips on top.
  11. Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  12. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  13. Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.
  14. Serve chilled.

Notes

  • For a richer flavor, try adding a tablespoon of cocoa powder to the cheesecake batter.
  • For a lighter version, substitute Greek yogurt for the sour cream.
