Description
A rich and creamy chocolate cherry cheesecake that combines the flavors of chocolate and cherries for a decadent dessert.
Ingredients
- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- ¼ cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
- Gradually add the granulated sugar and continue to beat until well combined.
- Add the vanilla extract and mix in the eggs one at a time, beating well after each addition.
- Finally, mix in the sour cream until smooth.
- Pour half of the cheesecake batter over the cooled crust.
- Spoon half of the cherry pie filling over the batter, then pour the remaining cheesecake batter on top.
- Finish by adding the remaining cherry pie filling and sprinkle the chocolate chips on top.
- Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.
- Serve chilled.
Notes
- For a richer flavor, try adding a tablespoon of cocoa powder to the cheesecake batter.
- For a lighter version, substitute Greek yogurt for the sour cream.
