Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chips (for topping)
  • 1 tablespoon coconut oil (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, combine the melted butter and sugar, mixing until well blended. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until smooth.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the semi-sweet chocolate chips.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the brownies are baking, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Once the brownies are done, remove them from the oven and let them cool in the pan for about 10 minutes. Then, pour the melted chocolate mixture over the top, spreading it evenly.
  8. Allow the brownies to cool completely before cutting them into squares. For best results, refrigerate for at least 30 minutes to set the chocolate topping.
