Ingredients
- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar, divided
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 cup milk
- For the Sugar Cookie Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened

- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
- In a medium bowl, toss the cranberries with 1/4 cup of the granulated sugar. Set aside to let them macerate.
- In a large mixing bowl, cream together the softened butter and the remaining 3/4 cup of granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together 1 cup of flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Gently fold in the cranberries, ensuring they are evenly distributed throughout the batter. Pour the batter into the prepared baking pan and spread it evenly.
- To make the streusel, combine 1/2 cup flour, 1/4 cup sugar, softened butter, vanilla extract, baking powder, and salt in a small bowl. Mix until crumbly. Sprinkle the streusel evenly over the batter in the baking pan.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
