Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cranberry sauce (canned or homemade)
  • 1 cup whipped topping (like Cool Whip)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for topping)
  • Fresh cranberries and mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, milk, eggs, and 1 teaspoon of vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  4. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
  6. Using the handle of a wooden spoon or a fork, poke holes all over the top of the cake, about 1 inch apart.
