A delightful and festive Christmas Cranberry Poke Cake that combines the sweetness of cake with the tartness of cranberry sauce, perfect for holiday gatherings.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 ½ teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 3 large eggs
- 1 can (14 ounces) whole cranberry sauce
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 cup whipped topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk. Mix until just combined.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
- Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
- In a small bowl, mix the whole cranberry sauce with the lemon juice. Pour this mixture evenly over the cake, allowing it to seep into the holes.
- Let the cake cool completely, then frost with whipped topping and sprinkle with additional cranberry sauce if desired.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a festive touch, consider adding crushed pecans or walnuts on top of the whipped topping.
- You can also substitute the cranberry sauce with raspberry or cherry for a different flavor profile.
