Description

A delightful and festive Christmas Cranberry Poke Cake that combines the sweetness of cake with the tartness of cranberry sauce, perfect for holiday gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 large eggs
  • 1 can (14 ounces) whole cranberry sauce
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk. Mix until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
  7. Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
  8. In a small bowl, mix the whole cranberry sauce with the lemon juice. Pour this mixture evenly over the cake, allowing it to seep into the holes.
  9. Let the cake cool completely, then frost with whipped topping and sprinkle with additional cranberry sauce if desired.
  10. Refrigerate for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a festive touch, consider adding crushed pecans or walnuts on top of the whipped topping.
  • You can also substitute the cranberry sauce with raspberry or cherry for a different flavor profile.
