Description

A festive and colorful Christmas Jello Poke Cake that will excite your holiday guests with its vibrant layers and delicious flavors.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs
  • 1 (3-ounce) package of red Jello (strawberry or cherry)
  • 1 (3-ounce) package of green Jello (lime)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup whipped topping (like Cool Whip)
  • Sprinkles or crushed candy canes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the Jello. In two separate bowls, dissolve the red Jello in 1 cup of boiling water, stirring until fully dissolved. Repeat with the green Jello in another bowl.
  7. Once the cake is done baking, remove it from the oven and let it cool for about 10 minutes. Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
  8. Pour the red Jello evenly over half of the cake, allowing it to seep into the holes. Then, pour the green Jello over the other half in the same manner.
  9. Refrigerate the cake for at least 2 hours, or until the Jello is set.
  10. Once set, spread the whipped topping evenly over the entire cake. Garnish with sprinkles or crushed candy canes for a festive touch.
  11. Slice and serve chilled.

Notes

  • For a richer flavor, substitute buttermilk for regular milk in the cake batter.
  • You can use different flavors of Jello to match your holiday theme or personal preference, such as blue raspberry or orange.
