Ingredients

  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream (or 1 pint heavy cream, whipped)
  • 1 cup crushed peppermint candies (or candy canes)
  • 1 cup chocolate pudding (prepared)
  • 1 cup crushed graham crackers
  • 1/2 cup milk
  • 1/2 teaspoon peppermint extract (optional)
  • Red and green sprinkles (for garnish)

Instructions

  1. In a medium bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. If desired, add the peppermint extract for extra flavor. Set aside.
  2. In another bowl, fold the whipped cream into the ricotta mixture until well combined.
  3. In a 9×13 inch baking dish, spread a layer of the crushed graham crackers on the bottom.
  4. Pour half of the milk over the graham crackers to moisten them.
  5. Spread half of the ricotta mixture over the graham crackers, followed by half of the chocolate pudding.
  6. Sprinkle half of the crushed peppermint candies over the pudding layer.
  7. Repeat the layers with the remaining graham crackers, milk, ricotta mixture, chocolate pudding, and crushed peppermint candies.
  8. Finish with a layer of whipped cream on top.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, garnish with red and green sprinkles for a festive touch.
