A delightful and festive Christmas Red & Green Velvet Cake perfect for holiday celebrations.
Ingredients
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 ½ cups vegetable oil
- 1 cup buttermilk, room temperature
- 3 large eggs, room temperature
- 2 tablespoons red food coloring
- 2 tablespoons green food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, green food coloring, vanilla extract, and vinegar. Mix until well blended.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to wire racks to cool completely.
- For the frosting, beat the cream cheese and butter together in a mixing bowl until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy. If the frosting is too thick, add milk one tablespoon at a time until the desired consistency is reached.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting on top, then place the second layer on top and frost the top and sides of the cake.
- Chill the cake for at least 30 minutes before serving to set the frosting.
Notes
- For a festive touch, decorate the cake with red and green sprinkles or edible glitter.
- You can substitute half of the all-purpose flour with almond flour for a nutty flavor and added moisture.
