Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 3 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 2 tablespoons green food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, green food coloring, vanilla extract, and vinegar. Mix until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to wire racks to cool completely.
  7. For the frosting, beat the cream cheese and butter together in a mixing bowl until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy. If the frosting is too thick, add milk one tablespoon at a time until the desired consistency is reached.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting on top, then place the second layer on top and frost the top and sides of the cake.
  9. Chill the cake for at least 30 minutes before serving to set the frosting.

Notes

  • You can substitute half of the all-purpose flour with almond flour for a nutty flavor and added moisture.
