Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces white chocolate, chopped
- 1 cup heavy cream
- 1 teaspoon peppermint extract
- ½ cup crushed candy canes (for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring between each, until smooth. Allow to cool slightly.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Pour in the melted white chocolate and peppermint extract, mixing until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
- Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
- Before serving, sprinkle the crushed candy canes on top for decoration.
