Description

A delightful Christmas White Chocolate Cheesecake that combines creamy white chocolate with a hint of peppermint, perfect for holiday celebrations.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate, chopped
  • 1 cup heavy cream
  • 1 teaspoon peppermint extract
  • ½ cup crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring between each, until smooth. Allow to cool slightly.
  5. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  6. Pour in the melted white chocolate and peppermint extract, mixing until fully incorporated.
  7. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
  8. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  9. Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  10. Before serving, sprinkle the crushed candy canes on top for decoration.

Notes

  • For a festive touch, consider adding a layer of raspberry or cranberry sauce on top before serving.
  • Substitute the peppermint extract with almond extract for a different flavor profile.
