A delicious and flavorful dish featuring marinated chicken breasts served with creamy Mexican street corn.
Ingredients
- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 2 limes
- 1/4 cup fresh cilantro, chopped
- 2 cups corn (fresh, frozen, or canned)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 cup cotija cheese, crumbled
- 1 tablespoon fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a small bowl, mix together the garlic powder, onion powder, cumin, paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Squeeze the juice of the limes over the chicken and sprinkle with chopped cilantro. Remove from heat and let it rest for a few minutes before slicing.
- While the chicken is resting, prepare the Mexican street corn. In a medium bowl, combine corn, mayonnaise, sour cream, chili powder, garlic powder, and cotija cheese. Mix until well combined.
- Serve the sliced chicken alongside the Mexican street corn, garnished with additional cilantro and lime wedges.
Notes
- For a spicier kick, add diced jalapeños to the corn mixture or sprinkle some cayenne pepper over the chicken before cooking.
- Substitute the cotija cheese with feta cheese for a different flavor, or use grilled vegetables instead of corn for a lighter side dish.
