Description

A delicious and flavorful dish featuring marinated chicken breasts served with creamy Mexican street corn.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped
  • 2 cups corn (fresh, frozen, or canned)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 cup cotija cheese, crumbled
  • 1 tablespoon fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a small bowl, mix together the garlic powder, onion powder, cumin, paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  3. Squeeze the juice of the limes over the chicken and sprinkle with chopped cilantro. Remove from heat and let it rest for a few minutes before slicing.
  4. While the chicken is resting, prepare the Mexican street corn. In a medium bowl, combine corn, mayonnaise, sour cream, chili powder, garlic powder, and cotija cheese. Mix until well combined.
  5. Serve the sliced chicken alongside the Mexican street corn, garnished with additional cilantro and lime wedges.

  • For a spicier kick, add diced jalapeños to the corn mixture or sprinkle some cayenne pepper over the chicken before cooking.
