Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup cinnamon cereal (like Cinnamon Toast Crunch), crushed

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the ground cinnamon, sour cream, and heavy cream until smooth.
  5. Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  6. Bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  8. Before serving, sprinkle the crushed cinnamon cereal on top of the cheesecake for added crunch.
