Description
A delicious and easy-to-make Cinnamon Roll Cake topped with creamy icing, perfect for breakfast or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- For the cinnamon swirl:
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter, softened
- For the cream cheese icing:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, combine the brown sugar, ground cinnamon, and softened butter to create the cinnamon swirl mixture.
- Pour half of the cake batter into the prepared baking dish. Spread the cinnamon swirl mixture evenly over the batter, then pour the remaining batter on top. Use a knife to gently swirl the cinnamon mixture into the batter.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the cream cheese icing by beating together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Add milk as needed to achieve desired consistency.
- Once the cake is done, allow it to cool for about 10 minutes in the pan before drizzling the cream cheese icing over the top.
Notes
- For a nutty flavor, add 1/2 cup of chopped pecans or walnuts to the cinnamon swirl mixture.
- To make it a bit healthier, substitute half of the all-purpose flour with whole wheat flour.
