Description
A delightful Cinnamon Swirl Cake Roll filled with cream cheese frosting, perfect for any occasion.
Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup all-purpose flour
- 1/4 cup powdered sugar (for dusting)
- 1/4 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar (for frosting)
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed)
Instructions
- Preheat your oven to 375°F. Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
- In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale, about 5 minutes. Stir in the vanilla extract.
- In a separate bowl, whisk together the baking powder, salt, ground cinnamon, and flour. Gradually fold the dry ingredients into the egg mixture until just combined.
- Spread the batter evenly in the prepared pan. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
- Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper and roll the cake up in the towel, starting from the short end. Allow it to cool completely in this rolled position for about 30 minutes.
- In a medium bowl, beat together the softened cream cheese, softened butter, powdered sugar, vanilla extract, and enough milk to reach your desired frosting consistency.
- Once the cake is cool, unroll it gently and spread the cream cheese frosting evenly over the surface. Roll the cake back up without the towel, seam side down.
- Chill the rolled cake in the refrigerator for at least 1 hour before slicing.
Notes
- For a chocolate twist, substitute 1/4 cup of the flour with cocoa powder in the cake batter.
- Add chopped nuts or raisins to the cream cheese filling for extra texture and flavor.
