Description

Ingredients

  • 1 ½ pounds ground beef (80/20)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 cup ketchup (divided)
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, salt, black pepper, thyme, and oregano. Mix until just combined; do not overmix.
  3. Transfer the meat mixture into a loaf pan, shaping it into a loaf. Spread ½ cup of ketchup evenly over the top of the meatloaf.
  4. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, prepare the gravy. In a small saucepan, combine the remaining ½ cup of ketchup, brown sugar, soy sauce, and beef broth. Bring to a simmer over medium heat.
  6. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually whisk the slurry into the simmering gravy until thickened, about 2-3 minutes.
  7. Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve slices of meatloaf drizzled with the brown gravy.

Notes

  • For a healthier version, substitute half of the ground beef with ground turkey or chicken.
