A classic meatloaf recipe topped with a savory brown gravy, perfect for family dinners.
Ingredients
- 1 ½ pounds ground beef (80/20)
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 1 cup milk
- 2 large eggs
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 1 cup ketchup (divided)
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 cup beef broth
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, salt, black pepper, thyme, and oregano. Mix until just combined; do not overmix.
- Transfer the meat mixture into a loaf pan, shaping it into a loaf. Spread ½ cup of ketchup evenly over the top of the meatloaf.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
- While the meatloaf is baking, prepare the gravy. In a small saucepan, combine the remaining ½ cup of ketchup, brown sugar, soy sauce, and beef broth. Bring to a simmer over medium heat.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually whisk the slurry into the simmering gravy until thickened, about 2-3 minutes.
- Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve slices of meatloaf drizzled with the brown gravy.
Notes
- For a healthier version, substitute half of the ground beef with ground turkey or chicken.
- Add chopped bell peppers or carrots to the meat mixture for extra flavor and nutrition.
