Description

Delicious donuts filled with a creamy cheesecake mixture and topped with a crunchy graham cracker crust, inspired by classic peach cobbler.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches (or canned, drained)
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (for cream cheese filling)
  • 1/4 cup crushed graham crackers (for topping)
  • 1 tablespoon melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
  6. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack.
  7. While the donuts cool, prepare the cream cheese filling. In a small bowl, beat together the softened cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth.
  8. Once the donuts are completely cool, use a piping bag or a small knife to create a hole in the center of each donut and fill with the cream cheese mixture.
  9. In a separate bowl, mix the crushed graham crackers with melted butter and sprinkle over the filled donuts for a crunchy topping.
  10. Serve immediately or store in an airtight container for up to 2 days.

Notes

  • For a twist, try using different fruits like blueberries or strawberries instead of peaches.
  • You can also drizzle a simple glaze made from powdered sugar and milk over the donuts for added sweetness.
