Delicious donuts filled with a creamy cheesecake mixture and topped with a crunchy graham cracker crust, inspired by classic peach cobbler.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced fresh peaches (or canned, drained)
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract (for cream cheese filling)
- 1/4 cup crushed graham crackers (for topping)
- 1 tablespoon melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
- Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack.
- While the donuts cool, prepare the cream cheese filling. In a small bowl, beat together the softened cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth.
- Once the donuts are completely cool, use a piping bag or a small knife to create a hole in the center of each donut and fill with the cream cheese mixture.
- In a separate bowl, mix the crushed graham crackers with melted butter and sprinkle over the filled donuts for a crunchy topping.
- Serve immediately or store in an airtight container for up to 2 days.
