Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In another bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
- Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the donuts are cooling, prepare the cheesecake filling by mixing the softened cream cheese, powdered sugar, lemon juice, and vanilla extract in a bowl until smooth.
- Once the donuts are cool, use a piping bag or a small spoon to fill each donut with the cheesecake mixture.
- In a small bowl, mix the granulated sugar and ground cinnamon for the topping. Roll the filled donuts in the cinnamon-sugar mixture for a sweet finish.
- Serve immediately or store in an airtight container for up to 2 days.
