Description

Ingredients

  • 1 large head of cauliflower, cut into 1-inch thick steaks (about 4 steaks)
  • 8 ounces of cremini or button mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Arrange the cauliflower steaks on the baking sheet and brush both sides with olive oil. Season with garlic powder, onion powder, thyme, salt, and pepper.
  4. Roast the cauliflower steaks in the preheated oven for 20 minutes, flipping halfway through, until they are golden brown and tender.
  5. While the cauliflower is roasting, heat a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are soft and browned. Season with salt and pepper.
  6. Remove the cauliflower steaks from the oven and top each steak with an equal portion of sautéed mushrooms and shredded mozzarella cheese.
  7. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with fresh parsley before serving.
