Ingredients
- 1 large head of cauliflower, cut into 1-inch thick steaks (about 4 steaks)
- 8 ounces of cremini or button mushrooms, sliced
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Arrange the cauliflower steaks on the baking sheet and brush both sides with olive oil. Season with garlic powder, onion powder, thyme, salt, and pepper.
- Roast the cauliflower steaks in the preheated oven for 20 minutes, flipping halfway through, until they are golden brown and tender.
- While the cauliflower is roasting, heat a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are soft and browned. Season with salt and pepper.
- Remove the cauliflower steaks from the oven and top each steak with an equal portion of sautéed mushrooms and shredded mozzarella cheese.
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For added flavor, sprinkle some red pepper flakes on top before serving for a spicy kick.
- Substitute the mozzarella cheese with feta or goat cheese for a different flavor profile.
