A rich and indulgent Coca-Cola Fudge Layer Cake that combines the classic flavors of chocolate and Coca-Cola for a delightful dessert experience.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 ½ teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup Coca-Cola
- ½ cup buttermilk
- 2 large eggs
- 2 teaspoons vanilla extract
- For the fudge frosting:
- 1 cup unsweetened cocoa powder
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- ⅓ cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix well.
- Add the softened butter, Coca-Cola, buttermilk, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well combined and smooth.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
- While the cakes are cooling, prepare the fudge frosting. In a medium bowl, mix the cocoa powder and softened butter until well blended. Gradually add the powdered sugar and milk, beating until smooth and creamy. Stir in the vanilla extract.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of fudge frosting on top. Place the second layer on top of the frosted layer and frost the top and sides of the cake with the remaining fudge frosting.
- Serve immediately or refrigerate for up to 3 days. For best flavor, let the cake sit for a few hours before serving to allow the flavors to meld.
Notes
- For a fun twist, try adding mini marshmallows or chopped nuts to the frosting for added texture.
- You can also substitute root beer or Dr. Pepper for Coca-Cola for a different flavor profile.
