Coconut Cream Bars are a deliciously easy dessert made with a graham cracker crust, creamy coconut filling, and topped with whipped cream.
Ingredients
- 1 cup graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a greased 8×8-inch baking dish to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a separate bowl, whisk together the sweetened condensed milk, heavy cream, and vanilla extract until smooth.
- Pour the cream mixture over the cooled crust and spread evenly.
- Refrigerate for at least 4 hours or until set.
- Once set, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the top of the bars.
- Cut into squares and serve chilled.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the cream mixture before pouring it over the crust.
- Substitute the shredded coconut with crushed nuts for a different texture and flavor.
