Description

A delicious and moist Coconut Pineapple Banana Bread that brings a tropical twist to your baking.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup melted coconut oil
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted coconut oil, beaten egg, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Do not overmix.
  5. Fold in the crushed pineapple, shredded coconut, and chopped nuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For added flavor, consider adding 1/2 teaspoon of nutmeg or a handful of chocolate chips.
  • If you prefer a more tropical flavor, substitute half of the all-purpose flour with whole wheat flour or almond flour.
