Description
A delicious and moist Coconut Pineapple Banana Bread that brings a tropical twist to your baking.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/3 cup melted coconut oil
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted coconut oil, beaten egg, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Do not overmix.
- Fold in the crushed pineapple, shredded coconut, and chopped nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, consider adding 1/2 teaspoon of nutmeg or a handful of chocolate chips.
- If you prefer a more tropical flavor, substitute half of the all-purpose flour with whole wheat flour or almond flour.
